Virgin Island Eggplant Stacks

“A taste sensation – Great as an entree!”


  • 1 large eggplant
  • 2–3 large tomatoes
  • feta cheese, thinly sliced
  • fresh basil leaves
  • Screaming Seeds ‘Virgin Island Mix’


  1. Slice eggplant into 1 cm thick rings, cover with salt and set aside for about ½ hour
  2. Rinse and dry thoroughly
  3. Place eggplant slices onto baking tray covered with a sheet of baking paper
  4. Slice tomato into rings and place on top of eggplant
  5. Place sliced feta on top of tomato and place 2 fresh basil leaves on each stack
  6. Sprinkle liberally with Screaming Seeds ‘Virgin Island Mix’
  7. Cook in preheated oven (180°C) for about 15 minutes or until eggplant is soft

....  For this recipe, if I don't have  'Virgin island Mix' in my pantry, what other SCREAMING SEEDS spice blend could I use instead?
