Self Crusting Quiche (using Virgin Island Mix)

  • 1 x 270 g tin corn kernels, drained
  • 1 spring onion, chopped
  • ½ cup self-raising flour
  • ¾ cup milk
  • 2 eggs
  • 1 teaspoon Screaming Seeds ‘Virgin Island Mix’
  • 2 tablespoons Parmesan cheese, grated
  • 3 firm tomatoes, sliced
  • paprika


  1. Lightly grease a 20 x 23 cm pie dish
  2. Arrange the corn and spring onions in the bottom of the dish
  3. In a bowl combine the flour, milk, eggs, Screaming Seeds ‘Virgin Island Mix’ and half the cheese.  Mix into a stiff paste.  Pour over corn and spring onion mixture
  4. Layer over the tomatoes and sprinkle with remaining cheese and paprika
  5. Bake in a pre-heated oven (220°C) for 20–30 minutes or until the centre is set and the top is golden brown

Recipe Variations:

  • Replace the corn with spinach, leeks, zucchini, sliced mushrooms or cooked chopped broccoli
  • Top with bacon pieces instead of tomatoes

....  For this recipe, if I don't have  'Virgin island Mix' in my pantry, what other SCREAMING SEEDS spice blend could I use instead?
