Couscous Salad (using Dukkah)

  • 2 cups couscous
  • 2 cups boiling water with salt and pepper and 1 tablespoon olive oil
  • 1 bunch spinach, well washed and shredded
  • 1 bunch mint, shredded
  • 4 ripe peaches or nectarines or 1 mango, chopped
  • ½ cup slithered almonds, toasted
  • 2 teaspoons Screaming Seeds ‘Dukkah’


  • 2 tablespoons olive oil
  • 1 dessertspoon balsamic vinegar
  • salt & freshly ground pepper


  1. Put the couscous in the boiling water mixture, turn off the heat and let sit for about 5 minutes or until all the water has been absorbed
  2. Meanwhile, combine ingredients for the dressing
  3. When couscous is cool, add all other ingredients, including the Screaming Seeds ‘Dukkah’ and combine with the dressing

....  For this recipe, if I don't have  'Dukkah' in my pantry, what other SCREAMING SEEDS spice blend could I use instead?
