Spiced Baby Snapper - Asian Style (using Tang Sichuan)

  • 1 Baby snapper
  • 1 cup flour
  • 1 - 2 tablespoons cornflour
  • 1 full teaspoon  Screaming Seeds 'Tang  Sichuan'
  • Tomato or chilli jam
  • Equal parts lime juice with grated **palm sugar


  1. Score the snapper to the bone with 2 or 3 diagonal cuts.
  2. Mix together flours & 'Tang  Sichuan', then dust the snapper on both sides with this mixture
  3. Quickly shallow fry in hot oil until golden brown

To serve: Combine lime juice/palm sugar then lavishly spoon over snapper.  Top with Tomato or Chilli Jam

Suggestion:  ** Palm Sugar is available in 'cakes' & easily sourced from all good health food & specialty food stores.  Simply grate the 'cakes' into your stir fries, marinades, dressings etc.
