Mexican Chicken Burritos

Big on flavour and easy to throw together, these Mexican Chicken Burritos are the ultimate weeknight win. Tender chicken is seasoned with our punchy Taco and Burrito Seasoning blend, then wrapped up with rice, beans, fresh salsa and all your favourite fillings. Great for meal prep, casual dinners or feeding a hungry crowd—just roll, wrap, and devour!

Ingredients

500g thigh fillets, diced
1 carrot, diced
1 zucchini, diced
1 red and green capsicum, diced
1 onion, diced
1 can of corn kernels, drained
1 tablespoon of lemon or lime juice
2 tablespoon coriander, chopped
2 tablespoons olive oil
3 teaspoons Screaming Seeds Taco + Burrito Seasoning
1x packet of Burrito wraps or Taco shells
1 garlic clove, crushed

Method

Place oil in a warmed pan with onions and garlic, cook until soft.

Add thigh fillets, stir occasionally until chicken is almost cooked.

Add diced vegetables and corn stir for 2-3 minutes.

Add juice of lemon or lime and Screaming Seeds Taco + Burrito Seasoning.

Stir until chicken and vegetables are cooked through (you may add extra Taco + Burrito Seasoning if needed).

Stir through coriander.

Serve in burritos or taco shells with your favourite salad ingredients.
