Ingredients
4-5 potatoes, preferably kipfler* with skins left on
4 tsp Screaming Seeds Moonlight Dreaming
1/2-1 cup mayonnaise
1 small red onion thinly sliced
Sea salt to taste
Method
Scrub potatoes and dice into 1cm cubes.
Boil water in a large saucepan, add potatoes and 2 tsp Screaming Seeds Moonlight Dreaming, cook until just tender, or approximately 10 minutes.
While potatoes are cooking, combine well in a bowl the mayonnaise and the remaining 2 teaspoons of Screaming Seeds Moonlight Dreaming.
Drain potatoes and while still hot, gently fold in the mayonnaise mix.
Place potato salad on a platter and garnish with red onions and a little sprinkle of sea salt.
*Kipfler are a long, elongated variety of potato with yellow flesh. The skin is pale yellow in colour. They are the perfect potato for mashing, boiling, roasting, microwave and salads. If kipfler potatoes are not available, use any good potato that is ideal for boiling. Red onion is also under another name of Spanish onion or alternatively, use shallots.
