Ratatouille (using Garam Masala)

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 clove garlic, crushed
  • 2–3 zucchinis, chopped
  • 2 red peppers, chopped
  • 1–2 eggplants, chopped
  • 2 teaspoons Screaming Seeds ‘Garam Masala’
  • tomato paste
  • 1 tin tomatoes or fresh tomatoes skinned, seeded & chopped
  • 1 dessertspoon white vinegar
  • 1 dessertspoon sugar


  1. Sauté onion and garlic in half the oil
  2. Add zucchinis and peppers and continue to cook until both start to soften
  3. Meanwhile, sprinkle the eggplant with some of the Screaming Seeds ‘Garam Masala’ and fry in remaining oil. Add to other vegetables
  4. Add tomatoes, tomato paste, the remainder of the Screaming Seeds ‘Garam Masala’, vinegar and sugar
  5. Cover and cook over low heat, stirring from time to time, for about an hour

Serving Suggestion: Serve with really creamy Mashed Potatoes or fresh Crusty Bread.
