Roast Chicken Thigh Fillets (using Bengal 5 Spice & Garam Masala)

(Serves 3–4)


  • 1 tablespoon Screaming Seeds ‘Bengal 5 Spice’
  • 1 tablespoon Screaming Seeds ‘Garam Masala’
  • pinch of cinnamon
  • 12 boneless chicken thigh fillets
  • 2 tablespoons olive oil
  • salt & pepper
  • 2–3 dry bay leaves (optional)


  1. Mix together cinnamon, Screaming Seeds ‘Bengal 5 Spice’,  ‘Garam Masala’, salt and pepper
  2. Season chicken with spice mix then sprinkle with olive oil
  3. Place chicken in oven pan. Add bay leaves (optional). Add water to barely cover chicken, then cover with foil
  4. Bake in pre-heated oven (180°C) for 1½ hours

Serving Suggestion: Serve with roasted potatoes.

....  For this recipe, if I don't have  'Bengal 5 Spice' or  'Garam Masala' in my pantry, what other SCREAMING SEEDS spice blend could I use instead?
