Chicken Burritos using Taco/Burrito Season Mix

Ingredients:

  • 500g thigh fillets, diced
  • 1 carrot, 1 zucchini, diced
  • 1 red & green capsicum, diced
  • 1 onion, diced
  • 1 tablespoon of lemon or lime juice
  • 2 tablespoon coriander, chopped
  • 2 tablespoons olive oil
  • 3 teaspoons Taco/Burrito Seasoning
  • Packet of Burrito or Taco shells
  • 1 galic clove, crushed

Method:

  1. Place oil in a warmed pan with onions & garlic, cook until soft
  2. Add thigh fillets, stir occasionally until chicken is almost cooked
  3. Add all diced vegetables stir for 2-3 minutes
  4. Add juice of lemon or lime & Taco/ Burrito Season
  5. Stir until chicken & vegies are well coated (you may add extra Taco mix if needed)
  6. Stir through coriander
  7. Serve in buritos or taco shells with your favourite salad ingredients

I like to put my salad ingredients on a platter & the meat in a serving bowl and let my children make their own burritos, its their favourite meal.
