Moroccan Lamb Tagine

Ingredients:

  • 1 tbs olive oil
  • 8 lamb shanks
  • 1 red onion, chopped
  • 2 garlic cloves, sliced
  • 1 tbs ginger, grated
  • 2 tsp Marrakesh Magic
  • 2 tbs palm sugar, grated
  • 4 tsp fish sauce
  • 4 large ripe tomatoes, roughly chopped or 400g can crushed tomatoes
  • 4 kaffir limes leaves
  • 2 cups checken stock
  • 2 potatoes, unpeeled & chopped
  • 1 sweet potato, unpeeled & chopped

Method:

  1. Preheat oven to 160C
  2. Heat oil in pan, add lamb shanks & cook for 2 minutes on each side, or until browned
  3. Remove lamb & place in baking dish
  4. Reduce heat to medium add onion to the pan, cook for 5 minutes stir often, add garlic, ginger & Marrakesh Magic, stir for 2 minutes
  5. Add fish sauce, tomatoes, sugar, lime leaves & stock. Bring to the boil then remove from heat
  6. Add potatoes to baking dish pour over the sauce, cover with foil & bake for 2 hours
  7. Serve with Cous Cous or rice
