Middle East Couscous Dish (using Marrakesh Magic)

6 May 2015

"Here is a very simple but awesomely delicious recipe.”

  • 4 lamb shanks
  • 4 spicy sausages
  • 2 large onions, thickly sliced
  • 2–3 teaspoons Screaming Seeds ‘Marrakesh Magic’
  • 1 x 440 g can tomatoes
  • stock
  • 3 large carrots, chopped into chunks
  • ¼ pumpkin, cut into 8 pieces
  • 1½ cup chickpeas

  1. Brown lamb shanks in a little olive oil in a heavy based pot or cassarole pot. Remove and place on a dish
  2. Add sausages in pot and brown. Remove and add to lamb shanks
  3. Add sliced onion and Screaming Seeds ‘Marrakesh Magic’ to pot and slowly fry until soft and beginning to colour. Remove
  4. Return lamb shanks, sausages and onion to the same pot
  5. Add carrot, pumpkin, canned tomato and enough stock to just cover
  6. Bring to the boil and reduce to a simmer for 1 hour or until stock reduced by half

Serfving Suggestion: “For a little difference, you may serve this scrummy dish with real creamy mashed potatoes instead of couscous … mmm!”

This recipe was kindly donated by my gorgeous Cuzz - Marina Deppeler …  thank you!!

....  For this recipe, if I don't have  'Marrakesh Magic' in my pantry, what other SCREAMING SEEDS spice blend could I use instead?

Why not try .....
