Magic Warm Vegetable Salad (using Southern Cajun)

  • 1 medium butternut pumpkin
  • 1 small cauliflower head
  • 1 x 440 g can cooked chickpeas, drained
  • 2–3 teaspoons Screaming Seeds ‘Southern Cajun’
  • 2 tablespoons olive oil
  • 1 bunch fresh coriander, roughly chopped
  • a little more olive oil


  1. Cut veggies into bite size pieces
  2. Marinate chickpeas and vegetables in a mix of olive oil and Screaming Seeds ‘Southern Cajun’
  3. Leave for approximately 30 minutes, making sure all is coated with the mix
  4. Roast in a baking dish at 180°C until veggies are tender
  5. Let cool and toss through olive oil and coriander

Serving Suggestion: Extra yumm! with minted yoghurt on the side

....  For this recipe, if I don't have  'Southern Cajun' in my pantry, what other SCREAMING SEEDS spice blend could I use instead?
