Dukkah Potato Gratin

(serves 4-6)


  • 750 g potatoes, peeled and thinly sliced
  • 200 g grated Pecorino cheese
  • 3 teaspoons Screaming Seeds ‘Dukkah’
  • 3 teaspoons olive oil
  • 3 spring onions
  • 3 cloves garlic, finely chopped
  • 2 teaspoons Screaming Seeds ‘Dukkah’
  • 150 ml white wine
  • 150 ml stock
  • 150 ml cream


  1. Place a layer of potato in a dish and sprinkle well with 150 g of cheese and Screaming Seeds ‘Dukkah’. This will make approximately three layers
  2. In a pan, sauté garlic and spring onions and rest of Screaming Seeds ‘Dukkah’ in olive oil for about 5 minutes
  3. Add wine and allow to reduce. Pour in stock and cream, stirring while bringing to a bubbling boil
  4. Pour this creamy mixture over potatoes and top with rest of the cheese
  5. Place gratin in a moderate oven (180°C) for approximately 50 minutes

....  For this recipe, if I don't have  'Dukkah' in my pantry, what other SCREAMING SEEDS spice blend could I use instead?
