Spicy Lentil & Tomato Soup (using Piri Piri Blend)

  • 250g (8 oz.) red lentils
  • 1 tablespoon vegetable oil
  • 1 onion - chopped finely
  • 1 garlic clove - chopped finely
  • 1 teaspoon ginger - grated
  • 1 celery stick - chopped finely
  • 2 teaspoons Screaming Seeds 'Piri Piri Blend'
  • 200g can chopped tomato - drained
  • 600ml vegetable stock
  • Salt & pepper to taste


  1. Place the lentils in a bowl of water.  
  2. Heat the oil in a large saucepan & gently fry the onion, garlic, ginger, celery and 'Piri Piri Blend' over low heat until softened.
  3. Drain lentils then add to the vegetables with tomatoes & vegetable stock combining well.
  4. Cover saucepan & simmer gently for 30-40 minutes until lentils are soft.
  5. Season with salt & pepper to desired taste

Suggestion:  Serve this healthy and delicious soup with crusty sourdough bread ..
