Exotic Potato Salad (using Dukkah)

  • 1kg potatoes - cooked & diced into large cubes            
  • Olive oil
  • 1 large red onion
  • 3 teaspoons Screaming Seeds ‘Dukkah’
  • 150mls vegie stock
  • 3 teaspoons good quality mayonnaise
  • 1/4 cup vegie stock
  • 4 teaspoons natural yogurt
  • 1 teaspoon grainy mustard
  • 2 teaspoons extra Screaming Seeds ‘Dukkah’
  • Handful chopped fresh herbs
  1. Sauté onion gently in olive oil till soft
  2. Throw in ‘Dukkah’ & sauté a further 2 minutes
  3. Add vegie stock & simmer gently for 5 minutes or till liquid has reduced & take off heat
  4. Then add the next 5 ingredients into the vegie stock/onion mixture and combine well.
  5. Place potatoes on serving platter & pour over dressing-mix gently.   
  6. Garnish with herbs & serve!

....  For this recipe, if I don't have  'Dukkah'  in my pantry, what other SCREAMING SEEDS spice blend could I use instead?
