Chickpea & Vegetable Curry

Ingredients:

  • 1 large onion chopped
  • 1 can of chickpeas
  • 1 garlic clove crushed
  • 1-2 tspn of Southern Cajun
  • 1 tbspn olive oil
  • 1 sweet potato, peeled & cut
  • 1 zucchini cut into chunks
  • 8-10 snow peas
  • 200ml coconut milk
  • 3/4 cup vegetable stock
  • Broccoli cut into chunks, handful of beans
  • Natural yoghurt to serve

Method:

  1. Heat oil in large pot add onion & garlic saute for 3-5 min.
  2. Add Southern Cajun & stir till mixed, then add stock & bring to the boil reduce to simmer add sweet potato cover & cook for 10 minutes.
  3. Add vegies & chickpeas cook for 5 minutes ( if using prawn or scallops add at this stage)
  4. Stir through coconut milk & snow peas simmer for 2-3minutes.
  5. Serve with cous cous and yoghurt.
