Beef Kofta Curry - using Garam Masala

Ingrdients:

  • 500g lean mince
  • 1 garlic clove, crushed
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon ground chilli
  • 1-2 teaspoon Garam Masala
  • 2 onions, roughly grated
  • 4 tablespoon korma curry paste
  • 1 tablepsoon sunflower oil
  • 200ml beef stock
  • 400g can tomatoes, crushed
  • 175ml low fat evaporated milk
  • 2 tablespoon lemon juice
  • 1/2 cup frozen peas

Method:

  1. Combine beef, garlic, ginger, chilli, Garam Masala, half the onion & tablespoon curry paste
  2. Season with salt & pepper, form walnut size balls
  3. Heat oil in pan on medium heat, cook kofta balls until slightly brown, set aside
  4. Add remaining onion cook on a low heat until soft
  5. Add curry paste, stock & tomatoes cook on a medium heat for 5 minutes
  6. Add milk & juice, return kofta balls to the pot, simmer on a low heat for 15 minutes
  7. Add the peas & cook for 2 minutes
  8. Serve with steamed rice & topped with coriander
