Fruits of the Sea - Desert Style

(Serves 4)

Ingreedients:

  • 500gms of firm, fresh fish eg: Trevally, Flathead, Salmon or any other type of fresh seafood
  • 1 tablespoons olive oil
  • 2 teaspoons mirin
  • 2 teaspoons Desert Cajun Rub
  • 3 tablespoons chopped fresh parsley
  • a good squeeze of lime juice

Method:

  1. Take fish and cut into thick chunks
  2. Combine olive oil with mirin, Desert Cajun Rub, parsley and lime juice.
  3. Leave to marinade for 1 hour;
  4. Then panfry, BBQ or grill…. Serve with tossed noodles in garlic and butter and a fresh salad.
