Chicken with Fresh Mint Noodle Salad

(Serves 4-6)

Ingredients :

  • 200g Bean thread or dried Thin Rice noodles
  • 3-4 large Chicken Thigh fillets,
  • 1 tablespoon Olive Oil
  • 2-3 teaspoons Screaming Seeds  'Rainforest  Season'
  • 1 cup shreded Mint or Vietnamese Mint leaves
  • 100g Beansprouts
  • 3 tablespoons Sesame seeds - lightly toasted

Dressing :

  • 3 tablespoons fish sauce
  • 2 tablespoons sugar
  • 3 tablespoons lime juice
  • 1-2 mild chilli, seeded & chopped
  • 1 teaspoon  Screaming Seeds  'Rainforest  Season'

Method :

  1. Place bean thread noodles in a large bowl & cover with boiling water. Allow to stand for 5 minutes & drain well.
  2. Meanwhile -  panfry on medium heat chicken pieces in olive oil & 'Rainforest  Season' till cooked.
  3. Once noodles are cooled, separate & spread noodles on a large serving platter.
  4. Toss the chicken with noodles, mint, beansprouts & sesame seeds, combing well.
  5. For the dressing:  mix well together -  fish sauce, sugar, lime juice & chilli.
  6. Pour dressing over the salad and sprinkle more of the Rainforest Season over the noodles ...
  7. Serve warm or chilled.
