A new taste sensation for the ever so simple pasta sauce

Ingredients :

  • 2 tablespoons Olive oil;
  • 2 large Onions finely diced;
  • 3 Garlic cloves, chopped;
  • 2-3 teaspoons Screaming Seeds  'Caribbean  Chilli';
  • 1 tablespoon Tomato Paste;
  • 1 tin pureed Tomatoes;
  • Handful black Olives;
  • 2 teaspoons  rinsed Capers;
  • 1 large Stock cube (or 2 small);
  • 1 cup Stock or 1 large (or 2 small) stock cube, dissolved in 1 cup boiling water
  • 1 cup red or white Wine;
  • 1 teaspoon Sugar

Method :

  1. Saute onions & garlic in olive oil till soft;
  2. Add Screaming Seeds  'Caribbean  Chilli'‚ & saute a further 5 minutes;
  3. Add tomato paste, pureed tomatoes, stock & wine - bring to a boil then simmer for 10 minutes;
  4. Add sugar & simmer gently for 1 hour, adding extra liquid stock if required;
  5. For variety, you may add in the last 15 minutes of simmering, (optional) 400g of sliced Seafood, Fish, Chicken or Tofu that has been lightly sauteed in a little olive oil, soy sauce & extra  'Caribbean  Chilli'  in a separate fry pan.

Serving Suggestions:  Serve the spicy salsa over hot rice, noodles or pasta.

....  For this recipe, if I don't have  'Caribbean Chilli'  in my pantry, what other SCREAMING SEEDS spice blend could I use instead?
