Lamb Biryani using Garam Masala

Ingredients:

  • 1kg diced lamb
  • 1 tablespoon Garam Masala
  • 2 teaspoons ground cumin
  • 1/2 teaspoon turmeric
  • 2 tablespoon olive oil
  • 1 onion, sliced thinly
  • 2 garlic cloves, crushed
  • 2 teaspoons ginger, finely grated
  • 300g basmati rice
  • 3 cups chicken stock
  • fresh coriander

Method:

  1. Pre heat oven to 200C
  2. Put lamb in a bowl with garam masala, cumin & turmeric, toss till well coated
  3. Heat 1 tablespoon oil in flameproof oven dish over a medium heat, add the lamb in batches stir until browned. Remove & set aside.
  4. Add the reamining oil, onion, garlic & ginger to the pot on a medium heat for 3 minutes
  5. Add rice, stir & cook for 2 minutes. Return the lamb to the pot in a single layer & pour stock slowly over lamb
  6. Put lid on the & put in the oven. Cook for 35-45 minutes, or until liquid is absorbed.
  7. Top with yoghurt & coriander
