‘VIRGIN ISLAND’ EGGPLANT STACKS

“A taste sensation – Great as an entree!”


Ingredients:

1 large eggplant
2–3 large tomatoes
feta cheese, thinly sliced
fresh basil leaves
Screaming Seeds ‘Virgin Island Mix’


Method:

  • Slice eggplant into 1 cm thick rings, cover with salt and set aside for about ½ hour

  • Rinse and dry thoroughly

  • Place eggplant slices onto baking tray covered with a sheet of baking paper

  • Slice tomato into rings and place on top of eggplant

  • Place sliced feta on top of tomato and place 2 fresh basil leaves on each stack

  • Sprinkle liberally with Screaming Seeds ‘Virgin Island Mix’

  • Cook in preheated oven (180°C) for about 15 minutes or until eggplant is soft
