SPICY  LENTIL  &  TOMATO  SOUP

Ingredients:

250g (8 oz.) red lentils
1 tablespoon vegetable oil
1 onion - chopped finely
1 garlic clove - chopped finely
1 teaspoon ginger - grated
1 celery stick - chopped finely
2 teaspoons Screaming Seeds 'Piri Piri Blend'
200g can chopped tomato - drained
600ml vegetable stock
Salt & pepper to taste

Method:

  • Place the lentils in a bowl of water.  

  • Heat the oil in a large saucepan & gently fry the onion, garlic, ginger, celery and 'Piri Piri Blend' over low heat until softened.
  • Drain lentils then add to the vegetables with tomatoes & vegetable stock combining well.
  • Cover saucepan & simmer gently for 30-40 minutes until lentils are soft.
  • Season with salt & pepper to desired taste ...

Suggestion:  Serve this healthy and delicious soup with crusty sourdough bread ..
