1 Baby snapper 1 cup flour 1 - 2 tablespoons cornflour 1 full teaspoon Screaming Seeds 'Tang Sichuan' Tomato or chilli jam Equal parts lime juice with grated **palm sugar
Score the snapper to the bone with 2 or 3 diagonal cuts.
Mix together flours & 'Tang Sichuan', then dust the snapper on both sides with this mixture
Quickly shallow fry in hot oil until golden brown
To serve - Combine lime juice/palm sugar then lavishly spoon over snapper. Top with Tomato or Chilli Jam
Suggestion: ** Palm Sugar is available in 'cakes' & easily sourced from all good health food & specialty food stores. Simply grate the 'cakes' into your stir fries, marinades, dressings etc.
