Pasta Salad with Smokey Tomatina

Ingrdients:

* 375g 'Bow' pasta - cooked & drained

* 150g sundried tomatoes, sliced

* 150g black olives, pitted

* 1/2 cup shredded basil

* 1 can artichoke hearts, quatered (optional)

* 1 garlic clove, crushed

* 2 tablespoons olive oil

* 2 tablespoons white wine vinegar

* 1 dessertspoon Smokey Tomatina

* 100g shaved parmesan

* extra basil leaves to garnish

Method:

* Whilst pasta is still warm, toss in all the ingredients except extra basil & parmesan, toss till well combined

* When ready to serve garnish with basil leaves & shaved parmesan

Serve as a side dish or as a meal with crusty bread
