SIMPLE  CAJUN  CHILLI  CHICKEN   (Serves 4)

Method:  


*   Slice 600gms of fresh chicken thigh fillets into pieces (breast, drumlets or wings are fine as well)

*  For the marinade, mix together in a container :
           -  2 teaspoons Olive oil
           -  1 tablespoon natural Yoghurt,
           -  2  teaspoons Screaming Seeds "Southern Cajun"
           -  3 teaspoons of your favourite Chilli sauce
           -  2 teaspoons Soy sauce
           -  2 teaspoons fresh Herbs, finely chopped.

*   Combine marinade ingredients including 'Southern Cajun' in a shallow ceramic or glass bowl, mixing well
*   Add chicken, making sure all pieces are laid out flat & are coated with the marinade
*   Leave to marinade for a couple of hours or if you have time, overnight - making sure to turn chicken pieces occasionally
*   BBQ, pan-fry or grill!
*   Serve over a fresh salad that has been tossed with olive oil & a sprinkling of Balsamic Vinegar & a side serving of hot noodles.

.....For this recipe, if I don't have 'SOUTHERN CAJUN' in my pantry, which alternative SCREAMING SEEDS spice blends could I use instead ?

  are also perfect for this recipe!

Serving Suggestions:  If you prefer something different, instead of chicken, you can very easily change it for tofu, fish, seafood, lamb, pork or beef work beautifully in this recipe as well.

With marinades in general, the longer you leave the meat soaking in this mixture, the tastier & better results in flavour you will achieve!!
