* Heat oil in a large skillet/pan – add onion & sauté until soft
* Add fetta, capsicum & mushrooms & sauté a further 3 mins then add spinach leaves, salt & cheese
* Pour in egg/spice mixture into pan, cooking on low heat, making sure the underside is slowly cooking
* Once the underside is just cooked place, the skillet/pan under a hot griller to cook the top of omelette for about 1-2 minutes
* Loosen the omelette and serve in desired portions
To Serve: Sprinkle with grated parmesan cheese & serve with your favourite toasted bread
