1 x 270 g tin corn kernels, drained 1 spring onion, chopped ½ cup self-raising flour ¾ cup milk 2 eggs 1 teaspoon Screaming Seeds ‘Virgin Island Mix’ 2 tablespoons Parmesan cheese, grated 3 firm tomatoes, sliced paprika
Method:
Lightly grease a 20 x 23 cm pie dish
Arrange the corn and spring onions in the bottom of the dish
In a bowl combine the flour, milk, eggs, Screaming Seeds ‘Virgin Island Mix’ and half the cheese. Mix into a stiff paste. Pour over corn and spring onion mixture
Layer over the tomatoes and sprinkle with remaining cheese and paprika
Bake in a pre-heated oven (220°C) for 20–30 minutes or until the centre is set and the top is golden brown
Recipe Variations:
Replace the corn with spinach, leeks, zucchini, sliced mushrooms or cooked chopped broccoli
Top with bacon pieces instead of tomatoes
No Virgin Island Mix in your Pantry? No problems … You can quite easily use instead :
