ROAST CHICKEN THIGH FILLETS (Serves 3–4)


Ingredients:

1 tablespoon Screaming Seeds ‘Bengal 5 Spice’
1 tablespoon Screaming Seeds ‘Garam Masala’
pinch of cinnamon
12 boneless chicken thigh fillets
2 tablespoons olive oil
salt & pepper
2–3 dry bay leaves (optional)

Method:

  • Mix together cinnamon, Screaming Seeds ‘Bengal 5 Spice’,  ‘Garam Masala’, salt and pepper

  • Season chicken with spice mix then sprinkle with olive oil

  • Place chicken in oven pan. Add bay leaves (optional). Add water to barely cover chicken, then cover with foil

  • Bake in pre-heated oven (180°C) for 1˝ hours


Serving Suggestion:

Serve with roasted potatoes.
