RATATOUILLE


Ingredients:

1 tablespoon olive oil
1 large onion, chopped
1 clove garlic, crushed
2–3 zucchinis, chopped
2 red peppers, chopped
1–2 eggplants, chopped
2 teaspoons Screaming Seeds ‘Garam Masala’
tomato paste
1 tin tomatoes or fresh tomatoes skinned, seeded & chopped
1 dessertspoon white vinegar
1 dessertspoon sugar

Method:

  • Sauté onion and garlic in half the oil

  • Add zucchinis and peppers and continue to cook until both start to soften

  • Meanwhile, sprinkle the eggplant with some of the Screaming Seeds ‘Garam Masala’ and fry in remaining oil. Add to other vegetables

  • Add tomatoes, tomato paste, the remainder of the Screaming Seeds ‘Garam Masala’, vinegar and sugar

  • Cover and cook over low heat, stirring from time to time, for about an hour


Serving Suggestion:

Serve with really creamy Mashed Potatoes or fresh Crusty Bread.
