Ingredients:                                                                                               

1kg boiled cold potatoes - cooked & diced into large cubes                

For the dressing :

 Olive oil

1 large onion

3 teaspoons Screaming Seeds 'Moonlight  Dreaming’

150mls vegie stock

3 teaspoons good quality mayonnaise

1/4 cup vegie stock

4 teaspoons natural yogurt

1 teaspoon grainy mustard

2 teaspoons extra Screaming Seeds 'Moonlight  Dreaming’

Handful chopped fresh herbs

Method:

Sauté onion in some olive oil till soft but not brown;

Throw in  'Moonlight  Dreaming’ & sauté a further 2 minutes;

Add vegie stock and simmer gently for 5 minutes or till liquid has reduced - take off heat;

Meanwhile, combine in a bowl mayonnaise, stock, natural yoghurt, mustard, extra 'Moonlight  Dreaming’

Place the potatoes on a decorative serving plate, then pour the dressing over the    

potatoes, mixing gently making sure all the potatoes are coated with the dressing and garnish with chopped fresh herbs and serve!
