PIRI PIRI FISH CURRY
Marinade Ingredients :
2 full teaspoons Screaming Seeds “Piri Piri Blend”
1 teaspoon ketchup manis
1 dessertspoon olive oil
½ cup mirin
4 decent sized fillets of Rockling, or any other firm white fish – fillets sliced in ½
A little extra olive oil for sautéing
Ingredients :
1 knob of butter
2 teaspoons Screaming Seeds “Piri Piri Blend”Juice of 3 lemons
200ml can coconut milk
6 cherry tomatoes – halved
1 cup your favourite herbs ie: mint, Vietnamese mint, dill, coriander, parsely
Method:
* In a bowl, combine all “marinade” ingredients then place fish pieces in this mix, coating well
* Marinade for 1-2 hours – overnight would be preferred
* Then, in olive oil, gently saute fish on both sides in a large frying pan on low heat with lid on, until fish is cooked – set aside
* In another large saucepan, place the next 5 ingredients bringing to a simmer. Simmer gently for 20 minutes
* Pour the coconut mixture over cooked fish, adding tomatoes & heat through gently
* Just before serving add fresh herbs….
To serve - Serve with roti bread, rice or couscous & natural yoghurt - Serves 4
