Moroccan Lamb Tagine

Ingredients

* 1 tbs olive oil

* 8 lamb shanks

* 1 red onion, chopped

* 2 garlic cloves, sliced

* 1 tbs ginger, grated

* 2 tsp Marrakesh Magic

* 2 tbs palm sugar, grated

* 4 tsp fish sauce

* 4 large ripe tomatoes, roughly chopped or 400g can crushed tomatoes

* 4 kaffir limes leaves

* 2 cups checken stock

* 2 potatoes, unpeeled & chopped

* 1 sweet potato, unpeeled & chopped

Method

* Preheat oven to 160C

* Heat oil in pan, add lamb shanks & cook for 2 minutes on each side, or until browned

* Remove lamb & place in baking dish

* Reduce heat to medium add onion to the pan, cook for 5 minutes stir often, add garlic, ginger & Marrakesh Magic, stir for 2 minutes

* Add fish sauce, tomatoes, sugar, lime leaves & stock. Bring to the boil then remove from heat

* Add potatoes to baking dish pour over the sauce, cover with foil & bake for 2 hours

* Serve with Cous Cous or rice
