MIDDLE EAST COUSCOUS DISH (serves 4)

"Here is a very simple but awesomely delicious recipe.”


Ingredients:

4 lamb shanks
4 spicy sausages
2 large onions, thickly sliced
2–3 teaspoons Screaming Seeds ‘Marrakesh Magic’
1 x 440 g can tomatoes
stock
3 large carrots, chopped into chunks
¼ pumpkin, cut into 8 pieces
1½ cup chickpeas


Method:

  • Brown lamb shanks in a little olive oil in a heavy based pot or cassarole pot. Remove and place on a dish

  • Add sausages in pot and brown. Remove and add to lamb shanks

  • Add sliced onion and Screaming Seeds ‘Marrakesh Magic’ to pot and slowly fry until soft and beginning to colour. Remove

  • Return lamb shanks, sausages and onion to the same pot

  • Add carrot, pumpkin, canned tomato and enough stock to just cover

  • Bring to the boil and reduce to a simmer for 1 hour or until stock reduced by half


“For a little difference, you may serve this scrummy dish with real creamy mashed potatoes instead of couscousmmm!”
