1 medium butternut pumpkin 1 small cauliflower head 1 x 440 g can cooked chickpeas, drained 2–3 teaspoons Screaming Seeds ‘Southern Cajun’ 2 tablespoons olive oil 1 bunch fresh coriander, roughly chopped a little more olive oil
Method:
Cut veggies into bite size pieces
Marinate chickpeas and vegetables in a mix of olive oil and Screaming Seeds ‘Southern Cajun’
Leave for approximately 30 minutes, making sure all is coated with the mix
Roast in a baking dish at 180°C until veggies are tender
Let cool and toss through olive oil and coriander
