Lamb Biryani

Ingredients

* 1kg diced lamb

* 1 tablespoon Garam Masala

* 2 teaspoons ground cumin

* 1/2 teaspoon turmeric

* 2 tablespoon olive oil

* 1 onion, sliced thinly

* 2 garlic cloves, crushed

* 2 teaspoons ginger, finely grated

* 300g basmati rice

* 3 cups chicken stock

* fresh coriander

Method

* Pre heat oven to 200C

* Put lamb in a bowl with garam masala, cumin & turmeric, toss till well coated

* Heat 1 tablespoon oil in flameproof oven dish over a medium heat, add the lamb in batches stir until browned. Remove & set aside.

* Add the reamining oil, onion, garlic & ginger to the pot on a medium heat for 3 minutes

* Add rice, stir & cook for 2 minutes. Return the lamb to the pot in a single layer & pour stock slowly over lamb

* Put lid on the & put in the oven. Cook for 35-45 minutes, or until liquid is absorbed.

* Top with yoghurt & coriander

* Enjoy..
