2 large cucumbers, peeled 1 teaspoon salt 1 clove garlic, crushed small piece ginger, crushed 1 green chilli, chopped 1 cup natural yoghurt 1 teaspoon Screaming Seeds ‘Dukkah’ lemon juice to taste
Method:
Cut cucumber into 4 lengthways, remove and discard seeds. Cut into fine cubes. Sprinkle with salt and mix in well. Leave for 15 minutes
Add garlic, ginger and chopped chilli to yoghurt (omit chilli if you don’t like it hot) and stir through
Drain liquid from cucumber and add to yoghurt mix
Sprinkle with lemon juice and the Screaming Seeds ‘Dukkah’
