* 2 teaspoons rinsed Capers; * 1 large Stock cube (or 2 small); * 1 cup Stock or 1 large (or 2 small) stock cube, dissolved in 1 cup boiling water * 1 cup red or white Wine; * 1 teaspoon Sugar
Method :
· Saute onions & garlic in olive oil till soft; · Add Screaming Seeds 'Caribbean Chilli'‚ & saute a further 5 minutes; · Add tomato paste, pureed tomatoes, stock & wine - bring to a boil then simmer for 10 minutes; · Add sugar & simmer gently for 1 hour, adding extra liquid stock if required; · For variety, you may add in the last 15 minutes of simmering, (optional) 400g of sliced Seafood, Fish, Chicken or Tofu that has been lightly sauteed in a little olive oil, soy sauce & extra 'Caribbean Chilli' in a separate fry pan.
Serving Suggestions: Serve the spicy salsa over hot rice, noodles or pasta.
