Greek Vegetable Soup
Ingredients:
* 500g seafood (fish fillets, scallops, prawns calamari etc)
* 1 can peeled tomato pieces
* 1 carrot, 1 zucchini, diced
* 2 celery stalks chopped including heads
* hanadful of baby spinach
* 1 leek, sliced
* 2 bay leaves
* 2 tablespoons of olive oil
* 3 teaspoons Greek Seasoning
* 1/2 cup rice
Method:
* Prepare vegies, place in a soup pot and saute with olive oil
* Add fish/seafood with tomatoes, add enough water to cover ingredients
* Add Greek Seasoning
* Once this comes to the boil, add rice and simmer gently till rice is cooked
* Serve with fresh lemon juice & crusty bread
