DUKKAH POTATO GRATIN (serves 4-6)


Ingredients:

750 g potatoes, peeled and thinly sliced
200 g grated Pecorino cheese
3 teaspoons Screaming Seeds ‘Dukkah’
3 teaspoons olive oil
3 spring onions
3 cloves garlic, finely chopped
2 teaspoons Screaming Seeds ‘Dukkah’
150 ml white wine
150 ml stock
150 ml cream


Method:

  • Place a layer of potato in a dish and sprinkle well with 150 g of cheese and Screaming Seeds ‘Dukkah’. This will make approximately three layers

  • In a pan, sauté garlic and spring onions and rest of Screaming Seeds ‘Dukkah’ in olive oil for about 5 minutes

  • Add wine and allow to reduce. Pour in stock and cream, stirring while bringing to a bubbling boil

  • Pour this creamy mixture over potatoes and top with rest of the cheese

  • Place gratin in a moderate oven (180°C) for approximately 50 minutes
