Dukkah Crusted Pork
Ingredients:
* 2x 400g pork fillets, trimmed & halved
* 2 tbs olive oil
* 2 tbs Dukkah
* 2 garlic cloves, sliced
* 2 red capsicum, thickly sliced
* 2 yellow capsicum, thickly sliced
* 1/3 cup raisins
* 2 tbs capers
* 2 tsp red wine vinegar
* Olive oil spray
* 2 tbs flat leaf parsley, chopped
* 1 tsp sugar
Method:
* Preheat oven to 200C
* Coat the pork with Dukkah & spray with oil
* Cook pork for 6 minutes, turning till browned on all sides
* Transfer to oven for 12-15 minutes
* Heat oil in a large frypan over a medium to high heat
* Add capsicum, garlic, & 1 tsp sugar, cook for 15minutes stir until capsicum have softened
* Add capers, raisins & vinegar then cook for a further 5 minutes
* Slice each fillet place on plates with salad & garnish with parsley
