2 tablespoons olive oil 1 large onion - chopped 3 garlic cloves - crushed 3 teaspoons Screaming Seeds 'GARAM MASALA' 1 kilo pumpkin chunks 1 sweet potato, chopped into large cubes 1 large potato chopped into cubes 1 large Stock Cube & a touch of Sea Salt (to desired taste) Water
Method:
· Saute the onion & crushed garlic in the olive oil, until soft; · Add 'GARAM MASALA' & saute a further 5 minutes; · Add cubed pumpkin, sweet potato & potato & saute until vegies are golden & mixed well with spices; · Add enough water to cover the pumpkin/potatoes, bring to boil & gently simmer for approx. 30-40 mins or until vegetables are soft. · In 2 or 3 lots, blend soup in food processor till smooth or better still - use a hand processor.
Finish off with a pinch of good Sea Salt - Serve with lots of fresh crusty bread & a big dollop of natural yoghurt, sour cream or cream!! Yummmmmm!
