COUSCOUS SALAD

Ingredients:

2 cups couscous
2 cups boiling water with salt and pepper and 1 tablespoon olive oil
1 bunch spinach, well washed and shredded
1 bunch mint, shredded
4 ripe peaches or nectarines or 1 mango, chopped
˝ cup slithered almonds, toasted
2 teaspoons Screaming Seeds ‘Dukkah’

Dressing:
2 tablespoons olive oil
1 dessertspoon balsamic vinegar
salt & freshly ground pepper


Method:

  • Put the couscous in the boiling water mixture, turn off the heat and let sit for about 5 minutes or until all the water has been absorbed

  • Meanwhile, combine ingredients for the dressing

  • When couscous is cool, add all other ingredients, including the Screaming Seeds ‘Dukkah’ and combine with the dressing
