CHICKPEA & VEGETABLE CURRY

Ingredients

* 1 large onion chopped

* 1 can of chickpeas

* 1 garlic clove crushed

* 1-2 tspn of Southern Cajun

* 1 tbspn olive oil

* 1 sweet potato, peeled & cut

* 1 zucchini cut into chunks

* 8-10 snow peas

* 200ml coconut milk

* 3/4 cup vegetable stock

* Broccoli cut into chunks, handful of beans

* Natural yoghurt to serve

Method

Heat oil in large pot add onion & garlic saute for 3-5 min. Add Southern Cajun & stir till mixed, then add stock & bring to the boil reduce to simmer add sweet potato cover & cook for 10 minutes. Add vegies & chickpeas cook for 5 minutes ( if using prawn or scallops add at this stage) Stir through coconut milk & snow peas simmer for 2-3minutes. Serve with cous cous and yoghurt.
