Heat oil in large pot add onion & garlic saute for 3-5 min. Add Southern Cajun & stir till mixed, then add stock & bring to the boil reduce to simmer add sweet potato cover & cook for 10 minutes. Add vegies & chickpeas cook for 5 minutes ( if using prawn or scallops add at this stage) Stir through coconut milk & snow peas simmer for 2-3minutes. Serve with cous cous and yoghurt.
