CHICKEN  with  FRESH  MINT  NOODLE  SALAD  (Serves 4-6)

Ingredients :

200g Bean thread or dried Thin Rice noodles
3-4 large Chicken Thigh fillets,
1 tablespoon Olive Oil
2-3 teaspoons Screaming Seeds  'Rainforest  Season'
1 cup shreded Mint or Vietnamese Mint leaves
100g Beansprouts
3 tablespoons Sesame seeds - lightly toasted

Dressing :

*   3 tablespoons fish sauce
*   2 tablespoons sugar
*   3 tablespoons lime juice
*   1-2 mild chilli, seeded & chopped
*   1 teaspoon  Screaming Seeds  'Rainforest  Season'

Method :

*   Place bean thread noodles in a large bowl & cover with boiling water. Allow to stand for 5 minutes & drain well.
*   Meanwhile -  panfry on medium heat chicken pieces in olive oil & 'Rainforest  Season' till cooked.
*   Once noodles are cooled, separate & spread noodles on a large serving platter.
*   Toss the chicken with noodles, mint, beansprouts & sesame seeds, combing well.
*   For the dressing:  mix well together -  fish sauce, sugar, lime juice & chilli.
*   Pour dressing over the salad and sprinkle more of the Rainforest Season over the noodles ...
*   Serve warm or chilled.
