* Place bean thread noodles in a large bowl & cover with boiling water. Allow to stand for 5 minutes & drain well. * Meanwhile - panfry on medium heat chicken pieces in olive oil & 'Rainforest Season' till cooked. * Once noodles are cooled, separate & spread noodles on a large serving platter. * Toss the chicken with noodles, mint, beansprouts & sesame seeds, combing well. * For the dressing: mix well together - fish sauce, sugar, lime juice & chilli. * Pour dressing over the salad and sprinkle more of the Rainforest Season over the noodles ... * Serve warm or chilled.
