Ingredients:
2 chicken breasts, skin off 3–4 teaspoons Screaming Seeds ‘Southern Cajun’ 1 large sweet red pepper 1 red onion, sliced grated cheese (I use ‘pizza cheese’) 1 pre-cooked large pizza base
Method:
Preheat oven to 210°C
Coat chicken breasts thickly with Screaming Seeds ‘Southern Cajun’ on both sides. Cook in microwave for about 8–10 minutes, turning once
Drain off liquid and roughly chop
Cut open red pepper, remove seeds and place skin side up under a very hot grill and leave until skin is blackened. Place pepper between two pieces of paper towel and leave for 5 minutes
Peel the black skin off the pepper and chop into strips
Top pizza base with chopped chicken, red pepper, sliced onion and grated cheese
Bake for 10 minutes, then slice
