CAJUN CHICKEN PIZZA

“Thankyou for the lovely spices.  Since I discovered Screaming Seeds my cooking is much more interesting.”


Ingredients:

2 chicken breasts, skin off
3–4 teaspoons Screaming Seeds ‘Southern Cajun’
1 large sweet red pepper
1 red onion, sliced
grated cheese (I use ‘pizza cheese’)
1 pre-cooked large pizza base


Method:

  • Preheat oven to 210°C

  • Coat chicken breasts thickly with Screaming Seeds ‘Southern Cajun’ on both sides. Cook in microwave for about 8–10 minutes, turning once

  • Drain off liquid and roughly chop

  • Cut open red pepper, remove seeds and place skin side up under a very hot grill and leave until skin is blackened. Place pepper between two pieces of paper towel and leave for 5 minutes

  • Peel the black skin off the pepper and chop into strips

  • Top pizza base with chopped chicken, red pepper, sliced onion and grated cheese

  • Bake for 10 minutes, then slice
