oBeef Kofta Curry
Ingrdients
* 500g lean mince
* 1 garlic clove, crushed
* 1 teaspoon fresh ginger, grated
* 1/2 teaspoon ground chilli
* 1-2 teaspoon Garam Masala
* 2 onions, roughly grated
* 4 tablespoon korma curry paste
* 1 tablepsoon sunflower oil
* 200ml beef stock
* 400g can tomatoes, crushed
* 175ml low fat evaporated milk
* 2 tablespoon lemon juice
* 1/2 cup frozen peas
Method
* Combine beef, garlic, ginger, chilli, Garam Masala, half the onion & tablespoon curry paste
* Season with salt & pepper, form walnut size balls
* Heat oil in pan on medium heat, cook kofta balls until slightly brown, set aside
* Add remaining onion cook on a low heat until soft
* Add curry paste, stock & tomatoes cook on a medium heat for 5 minutes
* Add milk & juice, return kofta balls to the pot, simmer on a low heat for 15 minutes
* Add the peas & cook for 2 minutes
* Serve with steamed rice & topped with coriander
